Would the start and stop time matter if it was set to bake vs time bake? Unfortunately the owner put red plastic drops to see the indicators better.

Newbie here I just purchased this original 1973 home in cape cod and love the original drop in oven. Everything except the oven works. Any thoughts? I can’t find a replacement thermostat for it. Any help would be greatly appreciated. It wouldn’t be the same without it.
