Here are 2 pizzas I made from scratch, on 2 separate occasions, both cooked on convection bake.

I always use convection when I make pizza, bake muffins, cookies, cakes, etc. Never had an issue with the food being cooked unevenly...in fact it actually cooks more even because the circulating air keeps the temperature in the oven more even.

I live 20 km from North Bay....it is not almost Arctic :-)
