just wondering what you guys have planned for the weekend?

And if you get invited to a BBQ...what's your best dish that you take?

we have 2 to go to sat and sun.....

I always make tuna salad...a quick, cool, easy, side dish!

1 lb box of elbow noodles
2 cans of tuna, drained
1 medium onion, chopped
2 stalks of celery, chopped
1 tsp parsley
1 1/2 cups of hellman's mayonaise

combine and stir together, refrigerate.....

a tip:..cool the noodles with ice cubes and running water!

I also serve this in a one gallon plastic ice cream tub with lid, easy to store, use, and carry, and I don't have to worry about getting my dish back!...just a hint!
 
I unfortunately have to work 2-10 Saturday and Sunday, We will probably all bring food in and I usually will make a Lemon-Lime Poppyseed cake, and potato or macaroni salad, or if I want to take a hot dish it is kielbalsa and sauerkraut and perogies to go with it.
 
Having family here tomorrow night for the 4th. The kids asked us for 2 old time favorites Fried Okra Salad and Cornbread Salad. The boys are going to do the smoked brisket and ten whole chickens. The girls are bringing the rest of the sides and my mother is making two peach cobblers.

Fried Okra Salad

1 lb bag of frying okra
oil to fry it in
Can buy the fried okra from a deli if wanted

Dressing
1/4 cup sugar
2 tablespoons vinegar
1 tablespoon water
1/4 cup vegatable oil

Disovle the sugar in the vinegar and water add the oil

Chop a large tomato or a pint of cherry tomatos quartered
Chop a bunch of green onions
Chop a bell pepper

After frying the okra place in a bowl along with the tomato, onions and bell pepper. Pour the dressing over it and refrigerate overnight.

Next day cook 8 slices of bacon and crumble.

Right before serving add the bacon and mix in.

We double for family.

Cornbread Salad

2 boxes of Jiffy cornbread mix baked in a 9 x 13 pan

Let Cool then crumble in a large bowl.

Chop 2 large or more tomatos

Chop either a red onion or 2 bunches od green onion

Chop a large green bell pepper

Add all to the crumbled cornbread.

Mix together then add one package of dry ranch style dressing then add 1 to 2 cups of mayonaise or mircale whip and stir add more of the mayo if need.

Let sit overnight

Can be halved.

Can add a can of pinto, black or mexican style beans (drained) and also if wanted a can of whole kernel corn drained.

W like just plain with out the beans and corn

Now....I used almost the same ingredient, but use 2 lbs. of cooked shrimp. I use either onions or scallions, the celery, finely chopped cucumber, and red pepper, and maybe some chopped home grown tomatoes, (seeded), salt, pepper. However, I use the Hellman's mayo, but I use equal parts of the mayo and sour cream. This makes it nice and creamy.
Best made the night before, so the shrimp had a time to meld with the other ingredients.

Now....if I am really feeling decadent, I also add lump crab meat.
