Now that Lent is officially here, we are enjoying some of our favorite meatless dishes on Fridays.

I do like me a nice tuna noodle casserole every now and then, although mine is a very basic condensed-soup-topped-with-crushed-potato-chips version. Yours looks great! I always enjoy the Kevin and Ralph productions.
 
Peter - my bad! You have it right in the saucy department! It's a bechamel indeed! Julia Child would give you a gold star!

Also, you want to cook the celery to tender - you could sweat in butter or steam.

Finally a tuna casserole without frozen peas and cream of mushroom soup!!!!

Trying this this weekend. For some stupid reason I've been craving tuna casserole!

Having been brought up in a fairly strict Catholic household (my mom spent her early years is an orphanage in Oakland run by really mean nuns,) Lent was always a big thing to me. So was not eating meat on Fridays until one day I scarfed down a piece of bologna on a Friday and nothing happened...no lightning bolt coming through the kitchen ceiling. During a Catholic tour of Italy a few years ago a friend/priest called me a "heathen" in St. Peter's in the Vatican after I simply asked a question, "what was better, touching the foot of this big statue of St. Peter in the cathedral or touching the nose of this pig in a fountain in a town square in Florence?' I figured this sealed my fate so Lent is meaningless now.

Finally made this tonight!!! Love it!

I was afraid I wasn't going to have enough sauce left, I kept tasting everything as I was making it.... Lol.
