Commercial DW Ventilation
John. In most cases All commercial dishmachines with the exception of undercounter units are required to have condensate ventilation by local or state code. Ducted venting from the DW openings to the exhaust fan unit as shown on the conveyor DW in this thread is equally effective and less costly than a canopy hood over the entire machine. It is the most common ventilation format on rack conveyor and flight machines. Ideally the DW ventilation will be balanced with climate controlled make-up air. An unvented commercial dishwasher will cook it's operator alive and cause severe moisture damage to the dishroom envirinment.
