Chicken / Rice with additions!

I made a chicken and rice dish tonight but added a few more ingredents than usual.
1 box of indian rice
2 chicken filets (cooked in advantium speed cook oven in corning ware)
1 full box of firm tofu chopped
1 zucchini chopped in bits cooked in frying pan with fresh garlic
1/2 of large onion added to rice
1/2 can of chicken brooth
1/2 cup of red wine
used EVOO
mixed all ingredents in large bowl adding some chille powder and nutmeg

Chicken and Rice

I would brown the cut up tofu to give it a nutty flavor. This would intensify any flavors the tofu would absorb from the cooking liquid.

by "Indian" rice, do you mean Basmati or Jasmine, or ???

I would throw in some peeled chopped fresh ginger, saute it with the garlic.
