I have some stainless steel steam pans that came out of a restaurant that went out of business. The bottom says "Next Day Gourmet". The larger one has sticky residue around the edges that I can't get off. Could be grease or old dishwasher residue. I was also wondering if they can be polished, they look a little dull and old.

Is the Badge that U.S. Foods (Institutional Food Purveyor) uses. This falls under the catagory of "Small Wares".

They are Stainless Steel. The sticky residue is more than likely baked on grease.

I would suggest a Green Scotch Scrubby with a coarse texture and either degreaser or Dawn and Hot Water. Then hit it with Brillo.

It will take a lot of elbow grease but they should shine again. Also if there is a white residue on the bottom and sides, that would be Lime Scale from them sitting in the Steam Table and the restaurant not changing the water in the steam table frequently enough.
 
What Eddie said Plus:

Those US Foods pans will clean up very nicely on the bottom with the use of Lime-A-Way and some elbow grease. I actually run hotel pans with scaled up bottoms through the dishmachine when I am deliming it. This makes them very easy to clean.
That dark buildup around the edges can be grease as Eddie said or melted plastic wrap because a warmer was too hot or wrapped pan was put in the oven. This is NOT residue from the dishmachine as that would be white and powdery. In fact some FS establishments don't run pans through the DM, they rinse them and then soak them in a sanitizer solution.
