Even better than fruit cake

My 85 year old neighbor makes this crowd-pleaser for thanksgiving - and at other times throughout the year too.
I CANNOT recommmend it enough! Here goes:
ARTIE'S DATE NUT CAKE
set oven to 350'
Very lightly oil a tube style pan
Ingredients:
1 pound (2 cups) of dates, pitted and chopped
1 pound (2 cups) of walnuts, chopped
1 cup of flour
2 teaspoons baking powder
1 cup of sugar
4 eggs - separated
1 teaspoon vanilla
In a large mixing bowl, combine the dates and walnuts. Stir in the flour, baking powder and sugar. Mix well.
Beat the egg whites until soft peaks form - about 2-3 minutes with an electric hand mixer. Set aside.
Slightly beat the egg yolks, add the vanilla to it, then pour that into nut-flour mixture. Stir well.
Finally, fold in the egg whites with a spatula. Blend gently.
Bake for 1 hour.
And of course, enjoy!

Ps: my neighbor also varies this recipe with those red and green candied cherries, etc., as one would expect with typical fruit cakes.
I'll ask him about that if you wish.
