When I lived in Cleveland, Ohio there was a Polish restaurant called Sokolowski’s University Inn. Family-run restaurant. Pierogis, kraut, Paprikash, and all sorts of Eastern European fare. SO good! The line of people standing outside to get in there was often a block long. And it was worth the wait.

I always promised myself I would get back there one last time before they retired. Alas, during COVID they decided it was time to retire and not reopen. ☹️
 
Matt, now you're talking my kind of pyrogy, Ukrainian-Canadian style, cottage cheese mashed potato or sauerkraut-kapusta in Ukrainian- both with lots of golden sautéed onion mixed in. Served with full fat sour cream.Cherry or blueberry filled in the summer.Speaking of full fat, anyone else tried beet borscht with liquid whipping Cream poured in until it's pink? Wow, great taste. And now I remember my aunt's new boiled potato topping sauce-sauteed onion then add and heat until thickened whipping cream, finish with some fresh dill, oh gosh, just fantastic, more potatoes please. A healthy diet requires a certain amount of carbs and fat right?
