I posted about this earlier in the year, finally got the recipe from my cousin. It's worth the cholesterol and the fat, it's that good!

BTW. on the Bacon package in a big blurb it says--> 0 Carbs, and 0 Trans Fats! Guess Bacon is REALLY healthy for you!

Killer Potato Salad

2 lbs redskin potatoes, not peeled, quartered - smaller is better
12 eggs hard-boiled cut in quarters- smaller is better
1 bunch green onions, chopped fine
1 lb bacon fried crisp and crumbled
1 tbsp dill- more is better
salt and pepper to taste
1 large bottle ranch dressing with bacon

Combine and enjoy!
 
Matt are you sure on the potatoes? 2 pounds isnt a whole lot..I could see 5 pounds and the rest of the ingredients and thats a whole lotta eggs too..half that would be OK and the ranch with bacon is overkill. Just saying andgiving my opinion so dont flame my ass cause I think this recipe doesnt make sense to me and I am pretty good at figuring out how things like this are made.

No, the potatoes are correct, 2 lb. We feed a large group for parties so we always double it. I fudged it a bit last night and used 5lbs. of potatoes and 2 doz. eggs and 2 lbs of bacon.

If you don't like ranch dressing I saw a number of similar recipes online that used a mayo based dressing, I suppose any creamy dressing would work.
 
A regular large sized dressing is 16oz, IIRC, but Hidden Valley and at least one other make larger than that- maybe 32 or 40oz?

That does sound like a lot of eggy-weggies! Edith Massey would be proud!

Of course it also needs a stack of pancakes soaked in melted real butter and pure maple syrup...

Anybody remember the SNL "commercial" for Taco Town? It was really stupid, but as I recall it wound up with a taco stuffed into a burrito wrapped with a pizza and deep fried, and then put into cloth carry bag and drowned with salsa and refried beans...
 
It looks like a good-tasting recipe, but I'm with Mike: The ratio of potatoes to ranch dressing/bacon seems unbalanced. Once I make it, I might think "Oh, he's right; two pounds of potatoes is plenty"...but just in case, I'm going to prep another pound or two.

I'm having a cookout on Monday afternoon, so I'll make a batch for that. I have two HUGE Boston Butt roasts thawing. I'm going to make pulled pork sandwiches as one of the entrees. Although, I cheat: I rub the roasts with a spice rub, then bake them at 325 degrees for about 8 hours in the oven. I make a homemade Memphis-style BBQ sauce for them.

Ralph can chime in here... I like potato salad but am fairly picky about what type I like. In general I've found I don't care for what's called "German" potato salad. However there's a brand that Costco carries, called, as I recall, "Will's San Francisco Potato Salad". Something like $6 for a five lb. container. And I save the containers - once put through the DW they are handy for food storage of all sorts, or to hold items or various fluids in the shop.

Of course it doesn't hurt that Will's San Francisco Potato Salad is actually made in my home town, San Leandro ;-)... At least I know it's as fresh as it can be and still be store-bought...
 
Well, it passed muster today at the fish fry, everyone said it was as good as the original my aunt makes. Though some mentioned it needed more salt, I thought the salt form the bacon was enough, people can always add more...

I guess this could be considered a meal in a bowl with protein, starch, and a vegetable. It's not something I'd make often, but once a year it's a treat.
