Depending upon several factors such as local or family customs, weather, and so forth from about late November through early April is when hogs/pigs are killed and made up into hams, sausages and everything else that can be used but the oink.
I personally have never been to one of these events, largely because have been informed one cannot stand around like Miss. Suzanne Sugarbaker. It is a very hands on thing and if one doesn't work, one does not eat or get any of the fruits of labor. I say that is just fine; I can order my hams by mail order! *LOL*
