Depending upon several factors such as local or family customs, weather, and so forth from about late November through early April is when hogs/pigs are killed and made up into hams, sausages and everything else that can be used but the oink.

I personally have never been to one of these events, largely because have been informed one cannot stand around like Miss. Suzanne Sugarbaker. It is a very hands on thing and if one doesn't work, one does not eat or get any of the fruits of labor. I say that is just fine; I can order my hams by mail order! *LOL*

Only good things about wild hogs is the meat!!!They cause untold amounts of damage to property and danger to people.Have seen a small herd of these things on the road on the way to work and they are SCARY!!!!They can HURT or even KILL and eat you ALIVE.Better to eat THEM then THEY eating you!In Texas they are ssuch a problem the wwild hogs are trapped and slaughtered and the meat sold-BETTER than raised meat--NO chemicals!!!!
 
My Grandparents did this

Every Thanksgiving, back then you could count on the weather being cold enough, Hams, shoulders, tenderloin, fatback, bacon, hog jowl, pig feet, liver mush, sausage and on and on, But a home cured country ham is better than ANY steak!
