KDS-18 "Rinsed Only" light comes on for no reason?

The rinsed only light will come on even if all you do is press the rinse and hold button and the machine starts to cycle and you raise the latch handle. I have done it many times myself when I had that unit in my kitchens. We always had the habit of latching the door, so it was easy to lean on the front of the machine and trip the buttons. See if that is not the case. If you latch the door and hit the rinse and hold button, does the cycle work properly? If it does, then maybe you have a program switch problem.
Since there are so few new in bag switches out there, any used one you get may be "loosened up" enough to cause the same problem. You may also want to take the control panel off and make sure that the reset actuator is pushing all the wafers of the switch back into the switch to align all the contacts back up correctly.

I'll pull the control panel off this weekend and take a
look, its sort of weird, the light comes on, but not fully, sort of dim. When I run a Rinse Hold cycle, it comes on fully when I open the door, but remains dimly lit when I close it.?

Run a Rinse Only Cycle. See if the light works as it should. It should come on bright when you open the DW.
Then when you get the time or a full load of dishes...run it through a regular cycle. See if this stops the problem.
Something is hanging up in the timer. It might reset itself.
Quite a few KDS-18's that I found had the Rinse Only light illuminated. After running a regular cycle, it went off.
I don't think it is anything to get freaked out about.

The Rinsed Only light is activated or deactivated by mechanical linkage to the buttons. It's not necessary to actually run Rinse/Hold to completion to activate it, or run any other cycle to completion to deactivate. Simply pressing the buttons should do the trick.
Open the door. Close the door handle (with the door open). Press Rinse/Hold (the machine won't actually run with the door switch not triggered). Raise the handle and the Rinsed Only light should be on. Close the door handle again. Press any cycle button except Rinse/Hold. Raise the door handle, and the Rinsed Only light should be off.
Guys, from the description it sounds more like an electrical issue, no? If the light is coming on "dim" when it should be off it sounds like a short to me.
OK, here's what I've done:
The "Rinse Only" light remains "on" but dimly lit continuously. I ran the "Rinse Hold" cycle and the light turned "off" when the cycle finished. When I opened the door,the light came "on" as it should brightly lit. When I closed the door, the light did not turn "off" as it should but went dim. I ran the "Normal Cycle" and the light remained "on" in its dim state where it is now. Took control panel apart and eveything looks clean and dry. Buttons look to reset as they should. Turned breaker off to see if that might help but the light came back on dimly. What's up??

Dim Rince Only Light
You are getting a slight feed through of voltage through the selector switch which is just enough to cause the light to light slightly. You can try one of several things to correct this or leave it alone as it won't hurt a thing, 1 paint the bulb black so you will only see it when it is on fully, 2 replace the selector switch or try to clean the dirty contacts by flushing contact cleaner through the switch, 3 Try connecting a 100 watt light bulb to the wires that go to the RO light, doing this might burn the dirt off the sel sw contact that is allowing voltage to bleed through to the light, 4 Add a voltage dropping resistor in series with the RO light.
You could also try replacing the light package itself as the RO light could have become too sensitive to voltage [ although I think this is pretty unlikley, but I have seen stranger things ]
