I have a receipt that I want to use for broccoli-rice casserole for Sunday's dinner. It calls for frozen chopped broccoli. Can I use FRESH broccoli instead of frozen? Will it turn out the same?
Please let me know what you all think. Thanks, Gary

thoroughly thawed, yes.

You don't want to cook broccoli twice (warming up is OK) so in some ways the frozen stuff will be even better - less chance of the sulfur compounds developing.

I've used frozen at those times of the year when fresh wasn't available for quiche since the 1970s and everyone's been happy with it.

Ditto cream of broccoli soup and even stir fry.

As noted you don't want to cook broccoli twice.

Thus you can either steam or even lightly microwave fresh broccoli first to make it tender, then continue with your recipe. You want to end up with a veggie that isn't too crunchy after cooking in your casserole that it may seem "raw" to your guests.
