Don't waste your time..
by calling Hobart.
Remember, the sale to Whirlpool was finalized 26 years ago and most,if not all the people who work in the Hobart parts departments have little or no idea of what Kitchenaid used to make back then. Also, nearly 100% of the commercial line offices had no dealings with the KA Major appliances as far as parts or service. The only items we ever saw in the NY office were the Mixers and Coffee Mills. Dishwasher service was handled by independent servicers until Whirlpool took over the lines.
The only things you would be able to find would be shaft seals and pump motors if you know what you are looking for and do not mention that they are for a domestic machine. They definitely have no parts manuals for anything Kitchenaid and even the really early undercounter commercial machine manuals are starting to become rare.
Midwest timer may be your best shot and you may have to send them yours first. When I needed a timer a few years back for my KDS19, they told me that they had gotten out of the business of domestic timer rebuilding but that may have changed so you may want to call them first.
