Might be a little late but if you're canning tomatoes try Tomato Powder

The one thing you have left over when canning tomatoes are the skins.   Here is an idea to make use of the skins - Tomato skin powder.  You season, dry and pulverise the skins to sue as a seasoning!

 

I'm canning tomatoes tomorrow and will give it a try.

That's interesting. Years ago when I would bake an apple pie, I saved the peels and cores and made a beautiful pink apple jelly--no additional pectin needed.
