The new GE gas stove we bought and I have been using is very accurate in temperature. Compared to the POS Bosch that I had been using for 9 years that went thru oven burner igniters like it was candy, the GE is a much better gas range all around in my opinion. The new GE uses the broil burner as well as the bake burner during baking. The broiler has a rather large steel plate above the burner and it cycles off and on like an electric oven. This is the first gas oven that I have used that does this. The Bosch used only the bake burner and results we ok but not outstanding. Temp swing on the Bosch I had was a whopping 50+ degrees. The GE just 10 degrees. Much tigher temperature range and it cycles more often. Bake results in the GE has been impressive. I have not broiled anything yet nor have I used the Convection modes yet.
To me in my opinion, there is nothing worse when your baking something and one follows directions to the letter and results are dismal, doesnt brown right, timing is way off and reliability is a major issue with the Bosch. It was a pretty face when we bought it, but had major issues right out of the box. Plus Bosch doesnt stand behind the crap they sell. When the 7th igniter went I said oh hell no!
 
We had a BOL GE gas range from about 2000 at our old house- So very basic that it had pilot lights for the top burners AND the oven, no clock/timer/digital anything, and no oven window. It had no issues whatsoever in 12 years, except for the pilots clogging up, but that was easily remedied with a toothpick. However, it never baked very well- if you planned on baking a cake or cookies/biscuits/whatever, it had to be on the top rack position, or the bottoms resembled charcoal, while the top stayed white. If you baked only on the top rack, it did fine, and we cranked out plenty of good food with it. We have an electric Whirlpool from about 1990 here, and it bakes FAR better than the GE ever dreamed of, and preheats in about 5 minutes. We can bake on any rack position, or any combination of positions, and it bakes perfectly, although the thermostat is about 50 degrees off (albeit reliably 50 degrees off). We also have a Maytag gas range downstairs (probably a bit newer than the one upstairs), and it performs slightly better than the GE, but nowhere near the electric Whirlpool. It seems to take forever to preheat, and cycles constantly. I haven't been impressed.
