We're having friends over to play cards and watch the Superbowl. Maria has lost 63 pounds following the Weight Watcher's plan and I try to make something equally delicious if she can't enjoy what the rest of us are eating. I know she loves lemon and I remembered a Walnut Meringue pie that was popular in the 60's. An internet search revealed the recipe and I would have screwed up trying to wing it because I wouldn't have guessed there were crackers in the recipe.

In a clean bowl whip
3 egg whites
1/2 cup sugar
1 teaspoon vanilla
Beat until whites form a stiff peak and then fold in
1 cup finely chopped walnuts
20 Crushed Ritz Crackers

Butter Up Butter Cup

Generously butter a 9 inch pie pan. Carefully fold the crackers and nuts into the stiffy beaten egg whites and pile into the buttered pan.

Done to a Golden Turn

Bake at 350 degrees for 30 minutes. Pie will have risen and then fall while it cools creating the "reservoir" in which to put the filling.

Gild The Lilly

The filling is Buttermilk Lemon from a few days ago using Splenda and sans butter topped with Fat Free Cool Whip. Maria will fudge here and there but reducing fats and sugar helps. After eating the pie I realized food processors weren't part of the 60's and I had ground the nuts and crackers too finely. They're better with a bit of chewy crunch. I used a 10 inch pie plate so the edges didn't ramp as much forming rasied edges that a 9 inch dish would have done. All in all its going to be just fine. For the rest of us I made the full on recipe using more of the 50 cent whipping cream from last week that is still as sweet as Georgia peach.

That looks great what is in the lemon filling as I am too trying to cut back on sugar.I would love to make that. Thanks Carl
 
A weight watcher's pie

Lemon Pie

1 small package Fat Free Sugar Free Lemon Jelo
3 small containers low fat Lemon Yogurt
1 small container fat free cool whip
1/4 cup water

1 low fat prepared graham cracker crust.

Dissolve the Jelo in 1/4 cup boiling water (If it doesn't want to dissolve, try nuking for about 15 seconds to help it.) Once dissolved, add in the Lemon Yogurt. Stir well. Fold in the cool whip. Pour into the graham cracker crust and chill.

This works well with any flavor combination of jelo/yogurt, Lemon, Lime, Orange, Strawberry/Banana, etc.
