This is a quick, easy and inexpensive dinner for two that I’ve been making for over 40 years. I use an 8 cup Pyrex Measuring Cup to make it.
Ingredients:
1 cup uncooked small elbow macaroni
1 cup milk (I use whole milk)
1 small can of Solid Pack White Tuna, very well drained
1 1/2 to 2 tbs butter
1 1/2 to 2 tbs flour
3 oz. shredded Cheddar Cheese ( I shred it on a piece of waxpaper)
salt and pepper to taste
Optional:
1/2 cup frozen peas added to the macaroni for the last min or a couple of sliced Green Onions for color
Bring about 2 quarts of water to a boil, add the macaroni and cook until desired doneness
Meanwhile in a microwave safe bowl, preferably with a handle:
Place 1 1/2 to 2 tbs of butter ( I just eyeball it) and melt on high for 30 secs. Add an equal amount of flour, and salt and pepper to taste, whisk it with the melted butter to blend thoroughly and nuke for 30 secs. Now add the milk and whisk thoroughly and nuke for 1 min (I just hit the 1 key 3 times) Remove bowl and whisk well and return to MW for another min, whisk well and return for another min and whisk well again. By this time it should be thickened and the whisk will smooth out any lumps. Place the shredded cheese on top of the white sauce, now the drained Tuna, flaking it with a fork and add the green onions if you’re using them. Drain the cooked macaroni and add to the bowl with the white sauce, cheese, tuna, peas and onions if using them. Mix well with and spoon and portion out on two plates. Enjoy!
This is a filling and delicious meal for two that is very budget friendly. We have this dish once or twice monthly and never get tired of it.
Hope you’ll give it a try. Sometimes instead of the tuna I’ll add a couple of ounces of diced, cooked Ham with the other ingredients, and this tastes great too.
Mac and Cheese made this way is MUCH better than Kraft from the box. When our nephews were little just about all they would eat was Kraft Mac & Cheese, but they loved Uncle Eddie’s homemade Mac & Cheese even more.
