This is 10x better than the canned cat food S#!T.
You will need:
16 cups diced baked potaotes
16 cups diced corned beef (cooked to fork tender)
6 cups diced raw yellow onions grilled in 4TBL butter.
4 oz butter
1TBL Black pepper
1 TSP granulated garlic.

Grill method:
Grill onions and combine will all other ingedients except 4oz butter.
Melt butter on 400f grill and cook mixture to internal temp of 165f and well browned.

Convection oven method:
Grill onions and melt butter, mix with remaining product and spread single layer on parchment lined sheet pans. Bake @ 425f on high fan speed to IT of 165f and potatoes are browned.

This should yield about 28 1cup servings. After cooking transfer to 4" hotel pan and hold in steamtable for service. (above 140f for no more than 4 hours) Discard leftovers or cool to 70f within 4 hours and 41f or less in six hours.

Adjust quantity and seasoning as desired:

I hate that canned stuff...hell, cat food would be BETTER!!!LOL, My Grandmother made hash with left over roast beef, I have not been able to duplicate it, but it sure was good!

I love hash, however, I also like the canned stuff. Aldi has a really good Corned Beef canned hash, you can fry it in a skillet and get a great brown crust. A little fatty, but good.
 
My mother used to put all the leftover vegs and corned beef through a food grinder and made patties fried in butter in a skillet. It was pretty good. She boiled everything, I roast it slowly in the oven. I think my hash is better than hers with the leftovers. Sorry Ma, there is more than just salt and pepper to season and make food taste better.
 
Re leftover pot roast

That's usually what she used, I remember that, potatoes and onions, and some green peppers, seems like she moistened it with some of the pot roast broth and browned it in a iron skillet, I just cant seem to get it right.
 
The only question I have is the "diced baked potatoes". Do you actually take a baked potatoe and then dice it?
Me personally, I slice up my uncooked potato and then fry it in a skillet.

I do love home made corned beef hash. The majority of the time I use a can of corned beef but make my own "hash". Every now and then I'll make the whole thing from scratch.

I've been to a couple of restaurants that actually serve home-made corned beef hash.
