It was a one-year offering, in 1961.  I've never seen anything more than one ad featuring this color, and no explanation as to why it was offered or what GE's thinking was.  This evening I found this 1962 ad on Ebay for a bottom mount in what appears to be the same color.  Again, no mention of the color.

I have seen a GE range in this color...

One that I unfortunately let get away!

It was a 30" rather high end, and, as you note, a 1961 model.

The other one

This is the only ad I've ever seen that showed the red range.  I purchased one of these just after I moved to Mobile, and worked long and hard to clean it up.  But after putting it into service I had a bad experience with the stove one evening and it tripped the power for the whole house.  I sold the stove shortly after that with strict instructions to NOT USE the left rear burner.
