Griddle / grill-pan !

This thread was prompted by thoughts flowing in Thread Number: 23781 "Nice Range on Sale" by Hydralique.
Don't want to hijack it!

SS, flat-disc bottom suitable for "gas, elctro, vitroceram halogen and induction. Made by Demeyere in Belgium.

Bought it years ago in a gourmet shop in Pennsylvania. Paid what I thought was a fortune, based on my income at the time.
Put it down and picked it back up thrice (that's twice + once more!)

A thing of beauty is a joy forever. Will be the first and last one I ever have / need!

What do you use?

I have one that looks exactly the same but it is by Cuisinart which I bought years ago to match my pot set. It is stainless on both sides with a copper and aluminum layers between the stainless. Use it all the time. Pancakes, eggs, etc. Really like it.
 
Believe it or not, in college me and my roommate used an upside down cast iron manhole cover. It seasoned up just like a skillet. He and his wife still use it.

Now I use a Griswald cast iron griddle. I also have a cast iron wok for stir fry.
