This is one of my Mothers Sisters recipes, Aunt Jean.,We had this at Thanksgiving and Christmas ALWAYS, I know she has been making it over 40 years.

4 med yellow squash,peeled.

2 onions sliced thin

4 carrots peeled and sliced thin

Cook above in salted water until tender, drain..

Melt 1 stick butter and pour over 1 regular size bag of Pepperidge Farm Herb Seasoned Dressing mix.

In Separate bowl, mix 1 can Campbells Cream of Celery soup with 1 cup Sour Cream, 

Layer in deep greased casserole, Stuffing,vegetables and soup mixture, ending with stuffing mix

Bake 325 for 30 minutes.

do you slice or chop the squash, or leave them whole?

Thank you, Hans. Other than this slight bit of confusion, the casserole sounds good, and a good potluck dish. Have you ever tried it with zuchhini?

Its not a casserole but

I love green and yellow squash. My favorite way is to wash them with a brush. Cut up into 1 inch thick slices. Spray a glass baking with cooking spray. Lay them out and sprinkle Adobo power, turn and do the other side. Cover with saran and put them in the fridge for an hour or so. A little butter in a pan over med high heat and brown on both sides. Served as a side dish. The flavor is just right and great texture. Many people have tried them and love them. The reason for spraying the dish is because if you don't, after running it through the dishwasher you will end up with all these little white circles where the squash was sitting.

Sounds so good, Hans,

but the sodium would likely kick my blood pressure meds' a**es!!

I like to slice them the long way to about 1/4 - 3/8", brush them with EVOO (I like using the oil left from when I roast garlic in it), season with ground pepper and grill them over a med-hot flame!

ah I just try to pick and use right away if can

Just rinse squash and cut into slices, add green or whatever peppers you have.. cut up, sliced onions and saute with olive oil. YUM YUM
the fresher the better. If I dont get down in garden and pick of those BAD Bugs I wont get anymore than the 4 I picked sofar. I hate chemicals try to avoid using i even though I have several organic supposedly ones....
we cook on the porch or will put in oven o in garage during most hot times.....
