Sure- why not!

Corn Salad

Best prepared with roasted corn cut from the cob, but you can use a good quality of frozen that's been defrosted and drained. Trader Joe's white cut corn is good!

About 4 cups (roughly 1#) cooked corn kernels
2 ribs celery, finely diced
2 slices sweet (Vidalia) onion, finely diced
1/2 sweet bell pepper (your choice of color), finely diced
2 large firm Roma tomatoes, seeded and diced
1 small jalepeno pepper, seeded, de-veined and finely diced (optional)
2-3 Tbsp chopped fresh cilantro
1 Tbsp fresh lime juice
Grated zest of 1/2 lime
1 tsp granulated garlic
1/4 tsp ground black pepper
pinch of salt (optional)
3 Tbsp good olive oil

Gently mix everything but the oil together and let sit for about an hour in the fridge. Before serving, drizzle with the oil, mix, and serve!

Enjoy!

Half & Half

6c water, nearly boiling
1/4c sugar
3 good, strong tea bags, or more if they're weaker

Mix the above together in a 2 quart container. Let sit for about 2 hrs. Remove tea bags and stir in about 3 heaping tbsp lemonade mix (i.e. Country Time). Fill to make 2 quarts and chill before serving.

I use British Tetley round tea bags. Each of these will make a regular pot of tea, so use 3 times the bags you would use of whatever tea bags you normally use for a pot of tea. Probably 9-10 regular US tea bags.

I've been making about a batch of this a day with the humidity and heat lately.

Enjoy!

Fresh Squeezed Lemonade:

7 cups chilled water
1 cup fresh squeezed lemon juice
1 cup of water
1 1/4 cup sugar.

Combine in a pitcher 7 cups of water in lemon juice, set aside.
In small saucepan combine 1 cup water and sugar, stir to dissolve. Bring mixture to a boil and let boil 1 minute. let cool slightly then add to lemon mixture.
Chill and garnish with fresh lemon slices

Crock Dogs (hot dogs in your slow cooker)

Perfect for when it's too hot to cook indoors or out. Pile as many hot dogs (or smoked sausage or Polska Kielbasa cut to bun length) as will fit into your slow cooker (you can pour in a can of beer or make a bed of sauerkraut in the bottom of the crock if you want), put on the lid, cook on High for 2 hours. That's it.

The dogs touching the stoneware will take on a little char and the ones farthest away will tan a bit from radiant heat.

That is all. Save some mustard and relish for me.
