I forgot that I snapped this last Sunday. Rich brought back some squid ink pasta when he was fortunate enough to visit Italy last Fall. So what did I do? Made a simple marinara and simmered squid rings in it. Served with garlic ciabatta, salad, and Shiraz. Yes, those things that look like cored apple rings are squid! I think the package said they came from Chernobyl Farms (at Market Basket).

wow that has to be the

biggest squid ever, a "Far Side" squid! Looks deelish ! And I already know you can cook up a storm Chuck! Love your meals.

 

Tonight I came home tired and all of a sudden after a nap with pooch woke up and wanted lamb chops !

 

Well that led to Mac'n Cheese , with broccoli, beans and a nice Cab too boot !

Not Sunday Dinner, last nights dinner

<span style="font-family: verdana,geneva;">I finally got a Wok that gets hot enough to make a decent stir fry.  This is a Weight Watcher's Tofu stir fry recipe.  For those who count points, its 6 points per serving without the rice.   This was about half of a serving.  Hubby had the rice.  I did not.</span>

Jon- Thanks (blushing). I wish I liked lamb- your plate looks amazing!

Chach- that's a 1/2 serving??? Wow! I'll take double that anytime! I use a steel wok on the side burner of the grill outside. I can't do it when it's raining, but when I want stir-fry, I absolutely agree... the wok has to be hot!

This past Sunday we had twice-glazed country-style ribs with bbq'd cannellini beans and a salad. First bbq meal outdoors this year!

<span style="font-family: verdana,geneva;">I love the idea of using the side burner of the outdoor grill.  I never thought of that.  Mine is under cover so I could do it when it's raining.  I am going to have to try that sometimes.  I've done eggs out there when we're doing breakfast outside but never would I have thought of using the WOK on it.  Thank you!!</span>

 

<span style="font-family: verdana,geneva;">Yes, that is about 1/2 serving without the rice :(!!  That was my partners' serving not mine.  He doesn't have to worry about the calories!!  </span>

 

<span style="font-family: verdana,geneva;">I love the idea of a cook in.  We could all prepare our specialities and have oursleves a "Taste of Automatic Washer!"  Has a nice ring to it!!</span>
 
I do enjoy looking at these photos of all this delicious food. I pop one up on the screen while I'm eating one of my diabetes-friendly meals.

Try this...steam the broccoli till still crisp add a handfull of cherry tomatoes and some watercress.
In a small bowl wisk 1/2tablespoon red wine vinegar, 1tablespoon extra virgin olive oil, 1/2teaspoon minced garlic, salt and pepper to taste...drizzle over veggies and toss. If its in your allowance sprinkle a bit of fresh ground parm cheese over it.
I used to make this for my mother who had diabetes. .I think it came from a recipe at a diabetes support group. Hope you enjoy. Cheryl
