one of our favorites...as one who's also made the "Julia" version from "The Way to Cook" a number of times, the one ingredient that makes a huge difference is the bacon, or "lardons" en Francais... we tried to leave it out once in a misguided attempt to make the dish a bit healthier ... don't do it! We like to use an inexpensive-ish Bordeaux in the dish, and drink a good one with it!
