Toaster Oven Frittata (but you can make it in a conventional oven, too; step-by-step photo-montage follows the recipe)
[temperatures in brackets are for the Panasonic FlashXpress toaster oven]
1 8-ounce package fresh breakfast sausage links
19 Tater Tots (store brand is fine)
8 ounces shredded cheese (we used Mexican style blend)
1/2 teaspoon black pepper
6 eggs
Arrange sausage links in a toaster-oven safe 9-inch pie pan (CorningWare Pyroceram is excellent for this), roast for 15 to 20 minutes at 375 degrees F [390 degrees F]. Drain cooked sausage on a paper towel. Carefully tilt and rotate the pie pan to grease the sides before pouring off the excess grease, leaving as much brown fond (or as Anne Burrell calls it "beautiful brown crud") as possible in the pan.
Arrange the sausage links like spokes of a wheel and fill the gaps with Tater Tots. Cover with the shredded cheese. Sprinkle with pepper.
Beat the eggs for three minutes at high speed with a hand mixer. Drizzle evenly over cheese, Tater Tots and sausage.
Bake for 30 minutes at 350 degrees F [355 degrees F], let rest 10 minutes before slicing into wedges.
