Scrub well 4 large Idaho bakers, bake until done, cut in half,carefully scoop out pulp into a mixing bowl, into which you have 1- 8oz package of room temp cream cheese, 1-8 oz carton of sour cream and 1 stick of room temp butter, 1 tsp salt and 1 tsp white pepper, beat well add a small amount of milk to make creamy, pack this into the reserved shells , top with extra sharp cheddar cheese and bake at 350 until the cheese melts...a few chives in the mix are good also.Really good with a big slice of extra rare standing rib roast and some asparagus with lemon hollandaise.A little horseradish on the beef and you are set to increase your blood pressure by 10 points !!
