Vintage gas stoves and pilot lights

I recall that there are some vintage stove restorers who replace the pilot system with pilotless electronic ignition.

 

Personally that's the way I'd go. I've had too many gas pilot lights go out for no good reason and then detect the gas by aroma later on.

You may want to think it through a little more before deciding to disable the pilots on an old stove.  If you're concerned about children in the house, at least if the stove had a pilot and one of them turned a knob, the burner would light.  Without a pilot, there would just be gas flowing for who knows how long waiting for a spark to ignite it, and potentially causing everyone to pass out in the meantime.

 

I can't recall ever seeing a gas stove with knobs anywhere other than up front, but if you can find one with knobs on the console, that would probably be ideal.

I doubt they leave the old pilot light orfices in place.
