What do you do with leftover Mojo Potatoes from Shakey's Pizza?

You bust out your saute pan, brown up a pound of chopped bacon, drain off all the fat, throw in the diced Mojo Potatoes, some frozen potatoes O'Brien, a half-pound of cubed pepperjack cheese and 8 well-beaten eggs.

After 30 minutes in a 350 degree oven, you let it rest on a cold stove burner for 15 minutes.

Then, you grab a nylon turner and a measure of courage and slide that big bad breakfast boy onto the cutting board right-side up.

You can do it! Don't wimp out! Flipping is for sissies!

You did it! You da Man!! Now hack it into wedges and start stuffin' it in your pie-hole! You earned it!

That looks sooo good.... one question..what are Mojo Potatoes? Potatoes O'Brien are the ones with onion and green peppers right?
 
Shakey's has been out of this area for at least 25-30 years. I didn't know they were still around.
 
My First Guess

Was... compost pile... LOL...

But I've never eaten at Shakey's, or had "Mojo Potatoes" at any venue, so what do I know?

I do wind up putting a fair amount of uneaten or spoiled food in the compost pile. Better than in the trash. I must curb my Costco habit, though.

I wish I had put those two Spicy Crispy Chicken sandwiches I bought Thurs night at Burglar King in the compost pile instead of my stomach, though. Felt queasy for about 36 hours afterward...
