Ralph asked me to make some eggplant parmesan, but I couldn't find eggplant and the farm stand was overflowing with zucchini, so we just used that. I actually think I like the zucchini version better!

Im going to make this, im a nut over eggplant or zucchini, this has to be great, the Crosley looks great, how do you like it??, hope you get to come visit soon, !!

My Grandmother grew eggplant in our garden when I was a kid, so we had it often, most of my friends had no clue what it was! LOL, we also had lots of different hot peppers and also horseradish which Grandmother loved...Im going to get some zucchini tomorrow and make this, Stuffed zucchini is also good, split it in half , scoop out the seeds, and fill with any stuffing mixture and bake, suprisingly good!

I like the Crosley very much! It is a very basic gadget-free stove, but I like the seven heat settings and it bakes very well!
Stuffed zucchini is a favorite - you will have to give me your recipe!! I sure it is full of good old Southern flavors!
