Got it all roughed in for testing. Zip-tied the sensor to the old tube, peeking out of the evaporator box at the same place. Set the parameters like David suggested and it seems to be working great. It's 70F in my home and the fridge is running a couple times an hour for 15min. The freezer is down to 3F so I might bump the range up a few degrees even.

For posterity, I used an A421 controller in place of the t-stat. It triggers the Supco RO81 relay which then feeds power to the compressor. All of the junctions from the power cord to the components are made at those wire nuts up front.

Made up a bracket to hide the controller below the chin panel so it would be easy to access without moving the fridge, but still out of sight. It just barely clears the floor with the fridge feet fully seated. Still need to wrap the loom and I'll probably add a junction box for the wire nuts.
