I've been looking everywhere that I can think of, and ran accross this site, maybe somebody might have some help, or idea where to find it.

My parents have a 78 Litton Microwave/Range Combo (no eye level unit, just the combined oven) it's model 621.00. The trouble is that the oven thermostat no longer regulates the temperature, and it gets continuously hotter until turned off. Of course the new parts for this are discontinued. I have been searching online for NOS or used parts. I found a thermostat from a similar model, the 651.000. The wiring is of course slightly different, but without a wiring/service diagram We can't tell if it might actually work. Anybody have any ideas where I might find wiring diagrams for such a unit?

Alternately, it appears that the issue with the thermostat is that the probe itself has split and is maybe shorted so it's not registering correctly. Anybody have any idea if a different probe could be grafted on in place of the damaged one?

No offence meant, but

I must congratulate your parents for getting so many years of use out of such a horribly designed and built appliance.

It is possible that if you went to an appliance parts dealer and managed to find someone who did not laugh you out of the store upon first hearing your request, they would be able to cross reference, via the model number and then the thermostat part number, a generic thermostat that might work. Begin by saying that you need a generic oven thermostat and ask if they have them. Don't start off by mentioning Litton.

The trouble is that you might have the self-cleaning components involved and that could be a real show stopper.

As Tom mentioned above these were not the best built ranges. I am very familiar with these ranges and have saved one for our museum, depending on condition of your parents range and the way it is used it { might } be worth fixing.
