I came across this recipe in an electric skillet cookbook from the 70s and wanted to give it a try, as we are big mushroom fans. It was easy and did not disappoint! Even better, it gave reason to use one of the electric skillets!

 
<span style="font-size: 14pt; color: #008000;">That dip looks like a fun thing to prepare in front of your guests, especially if the mushrooms are already cooked. I like the idea of serving it directly out of the electric skillet too. I have a very large 2-level kitchen island so I can cook on a portable appliance and face friends as they slurp their cocktails.</span>

<span style="font-size: 14pt; color: #008000;">Do you have one of those stainless steel Hoover skillets that's shaped like the Westinghouse one that Kevin uses in the video? I had one years ago and I'm tempted to get another one. The quality was outstanding. It had handles that snapped off so you could give it an extra-good cleaning. The one I had was purchased at a flea market and had an avocado green lid with a broiler element and a warming tray underneath. There's a few listed on eBay and I think might snatch one up to replace my cheap Presto non-stick model. Hoover had a very nice line of small appliances.</span>

Yes, I have that Stainless Hoover skillet, mine has a regular aluminum lid and doesn’t have the broiler element in the lid.

These are definitely high quality pans, you can also find the exact same skillet under the Nesco name as well
 
I personaly freak out with the idea of anything secondhand or refurbished or whatever that's not absolutely brand new leaving the sealed box (and myself unboxing, to be sure) touching my food.

Those vintage skillets are VERY interesting and I've seen some of them in thrift stores. I had no idea a skillet with a broiler ever existed.

Anyway... I was firm on not having an electric skillet. I have so many small appliances and trying to save money and space in my kitchen to buy the food processor I want (exactly a KA 14 cup FP with dicing kit AND in EMPIRE RED) before Kitchenaid ends up discontinuing it that was firm on saying a giant NO for an electric skillet come on, i have FOUR skillets (3 All-Clad) and a gas stove that I love HOWEVER, today I noticed my husband started to look for skillets after seeing this thread and before he ends up arriving home with a Farberware or Bella or whatever "El Cheapo" Walmart crap and I end up having to enter my kitchen and look to another small appliance I hate, just like the coffee maker (I have 2, one i love, the other he loves and I hate because one of the features, a milk frother, didn't work out of the box and Ninja refused exchange because it was a "sale - as is" thing), the large electric pressure cooker that burns even soup, the roaster oven that steals space and will never be used now that i have TWO other ovens and the hand blender) I think I should start looking for an electric skillet. I don't plan to buy it, but at least I have something to show darryl and say "If you can't resist at all, then buy this specific model!

I've found something on amazon that kinda attracted me because of the folding handles (I need to optimize every single inch in my kitchen)

What do you guys think about this model?

Second possibility... I don't really love it, it looks somewhat flimsy but at least it's red and everything in my kitchen is red, except the hand blender that I gave to my sister 1 year ago, used just a few times BECAUSE IT WASN'T EMPIRE RED and a couple of days ago my husband surprised me as a wedding anniversary EXACTLY THE SAME MODE, SAME COLOR, right when I was just waiting for Kitchenaid to make available the new cordless model in Empire Red (murphy law, the same day it happened) and I'm still so angry that I'm almost using it with the chopping bell and speed 5 on his balls.

What I really, REALLY wanted was the kitchenaid multi-cooker with the stir tower, however, KA never made the Empire Red available in the USA and it is also being discontinued now (so no way I want it now just to look at it and know it's not the color i wanted and every time I use it I feel pissed off because it was purchased after knowing it was discontinued)

Other possibility, i had one in Brazil, loved it but I have no idea if Philips still makes it. THe Philips Jamie Oliver home cooker


I never saw it here in the USA and I doubt Philips released it here. Anyway, it's onve of the very few appliances nowadays that I can say it's PERFECT.

Your recipe, just as is

The only differences were:

1) I stir fried a little bit of bacon (finely cut strips) just because I'm Brazilian and I can't even imagine any food that doesn't have some meat in it, the more the merrier. by "a little bit", read as half inch of a regular block of sliced bacon that I cutted instead of separating the slices just to give a hint of bacon.
2) the mushrooms I gave a quick 2 or 3 pulses in the food chopper to make smaller bits (not a powder because I didn't want them to disappear)
3) As the FC was already dirty and I had 3 small carrots that I had to find a way to use before they ended up bone dry in the fridge, i tossed them in the FC to make tiny bits. (pulse as much as possible you know, like when you're trying to "hide" vegetables in the food for children.)
4)As it would be too "white" (pasta, white mushroom, bechamel) and it would look like hospital food, i added some brocolli florets. Again, threw it in the FC because i didn't want to have "monster trees". but just 2 or 3 quick pulses.
5) A bit more flour (to make 50% more sauce)

Everything else just like your recipe. Then cooked short pasta halfway (I made with penne, but I think colored fusili would work even better and make it even more colorful and festive but I didn't have it available in my pantry at the moment) and finished cooking it in the sauce. Note that I strained the pasta very quickly to have some of the cooking water thinning the sauce. Until pasta was done, the extra water evaporated.

When I tried it, it was just like that Rat-tauile almost final scene. I couldn't believe I made something so spectacular. It was simple and at the same time highly sophisticated, guests would think I spent hours in the kitchen.

I'm addicted to homemade pasta and I'm looking forward to get that Kitchenaid pasta extruder (I only have the roller/cutter kit), so I can make my own fusili. Can you imagine this dish made with fresh homemade pasta instead of Barilla?

 
I have that exact Hoover fry pan from my grandmother--use it semi-frequently---though rarely either the broiler element or the warming tray. Hoover had a slightly different design on the plug than the norm--where all other ones used a male probe attached to the plug control, Hoover had a female on the plug control (i.e. 3 receptacles rather than one probe and two receptacles). The Hoover plug is slightly warmer to the touch when you take it out than the Sunbeam-type (which I don't care for, but isn't dangerous or anything--just slightly startling).
 
Bringing this thread back from the dead.

Tonight I was wondering what to do for dinner and Youtube was generous enough to show me Kevins's video on the top of recommended vídeos the moment I opened the app.

What a lovely surprise! I dont know Kevin personally, as far as I remember, but I can guess he's a very nice guy. His kitchen is a dream and fascinating. I didn't remember I've tried this recipe, not once, but at least 3 or 4 times.

It was also fun to see my comments and the pictures. Wow, a lot changed in one year. I didnt get the KA FP, instead a Breville sous-chef Peel and Dice that I love more than my own life.

I also changed my mind regarding the skillet. I definitely want one, vintage preferably if stainless steel. I'll start doing some research again.

Anyway, I rushed to the store only to be frustrated. The shelf that had mushrooms was empty.

Anyway, tomorrow I'll go to another store and guess what we'll have for dinner. More pics to come!
