So, my opinion after working in fridge R&D for 9 months now

The reason the sensor is placed the way it is is - I think - that they wanted to not actually only read the compartment temperature.

Modern fridges often have both evap temp sensors AND compartment temp sensors.
The temperature of evaporator/condenser directly correlates to the pressure inside it.
Having a temp sensor on it is much cheaper to do than actual pressure readings and since the 2 things are so tightly linked you can easily correlate them with basic maths and offsets.

Those metrics are then directly correlated to the efficency - and to a degree safety, but very much lesser so.
You want your evaporator to have a specific temperature - that's where the fridge runs the most efficent. Modern fridges then actually modulate fan speeds and compressor speeds to keep your evap at a very specific temp.
This fridge drops refrigeration quality for cheapness and efficency.

The reason it is much more efficent than the rating suggests is that fridges in the US get tested at 32C ambient - just shy of 90F - to basically imitate what would happen if the door was opend like it would be during normal use.
 
Evaporator thermistors

I did not watch the video. I can’t stand listening to that guy.

The reason refrigerators have a thermistor clamped to the evaporator is for the defrost cycle it lets the refrigerator computer know when the evaporator is properly defrosted.

Basic top freezer refrigerators like the one in the picture in the US do not have variable, speed, compressors, or fan motors that would be very unusual,

Many nicer US built refrigerators have had an evaporator thermistor since about 2000.

Yeah, unfortunately that channel has become a bit more biased as of late. Alec seems to be one of those people “let’s completely stop using natural gas and ban it” crowd but doesn’t take in consideration that natural gas is probably one of the cleanest burning fuels out there. He also pushes for heat pumps which work in mild winter climates like the southwestern US (with the exception of Colorado and Utah) but won’t do anything where it gets well below freezing in the wintertime.

One trick I do is I set the video to the 2x playback speed, kind of funny listening to people talk at twice the normal speed 😂, also means less revenue in their pockets since less watch time (2x speed reduces watch time) means less cash in their pockets.
 
It has no defrost cycle/heaters etc just like a plain old chest freezer. The fridge section self defrosts when the mechanical t-stat shuts off and the thin bit of ice on the back wall of the fridge melts and drains into the pan sitting over the compressor on the bottom. The freezer section has to be scraped down occasionally.

I suspect this annoying guy could be a perennial attendee at a ComicCon, Star Trek or D&D convention, or worse yet, a renaissance fair.

Though I don’t live too far from San Diego, never been to ComicCon. Thought about going over the years but would probably get bored out easily and probably would leave and unfortunately I am one of those folks who can get bored easily at times and need some sort of entertainment or project to keep me occupied. Much rather spend some time driving by the beach or taking a stroll through Old Town San Diego, or visiting friends and family who live in the San Diego area. Also would like to drive around on the backroads such as taking highway 79 to the 76, and overall just driving around the rural parts of San Diego county.

This type of refrigerator does need a thermistor on the evaporator in the refrigerator section because it does have a defrost cycle.

When this type of refrigerator was built with mechanical control it needed a very precisely accurate thermostat to allow the evaporator in the refrigerator to defrost completely before it turned back on otherwise it would turn into a mess,
