A fun party cake - Pineapple Coconut Cake

We made this for a dear friend's birthday party and it didn't last long. There are a few steps, but it's not complicated and takes advantage of some easy conveniences.

Kevin and Ralph you really brought back memories with this cake. My mom made this lots for pot luck dinners at church. Only difference from yours is she added 2 to 3 tablespoons of corn starch to the sugar and pineapple and cooked until it was clear and thincken and poured it all over the cake.

Been years since I had this now will have to. Yummy Yummy!!

I haven't made a cake since you last tempted me with that pineapple upside down cake which reminds me I bought two boxes of that mix and the remaining one is still in the cupboard I believe along with an extra can of mandarin oranges. Now that the heat is gone maybe it's time for another cake.

I'm not a huge fan of either pineapple or coconut* but this cake looks really, really good!

*although I do eat both when they're served to me
