I have a GE Profile bought in 2011, just checked and I have K on mine also. I remember reading in the manual about setting up Sabbath Mode but never knew about the K.
Our Hotpoint gas stove had a Sabbath Mode oven, but the only way keep someone from turning on a gas burner would to turn off the gas unless Sabbath Mode also turns off the igniters, but that would be a very, very bad thing.

That’s just it—you kasher your appliances by taking the lightbulbs out when what’s needed is a sabbath mode for interior lighting, I think sockets get corroded leaving them empty or at least put in burned out bulbs… Shocking that the lighting inside except perhaps in Israel in new appliances today isn’t designed that way…
My in-laws, late in-laws and others of my wife’s family who are observant had bouts with appliances that turned off, when they were in need of a sabbath mode, whereas they were spoiled by all their old appliances being allowed to be left on sundown to sundown as they needed or as they pleased…
