Hawaiian Cream Pie
1 9 inch baked pie shell
1 cup canned crushed pineapple with juice
1/2 cup sugar
1/4 cup cornstarch
1 large banana sliced into rounds
1/2 cup chopped toasted pecans
1/2 cup plus 2 TBSP shredded coconut
2 cups whipping cream
Bake and cool pie shell
In a heavy saucepan,combine pineapple with juice, sugar and cornstarch, bring to a boil stirring constantly over med high heat,cook until thickened, 2 minutes or so, set aside to partially cool,
Place 1/2 of the sliced banana,top with 1/2 the pecans, 1/2 of the filling, then 1/4 cup coconut.
repeat these layers,toast the 2 TBSP coconut, toast it and cool, top pie with sweetened whip cream then sprinkle with toasted coconut, chill...
Donald cringed at this because he would rather sit in the electric chair than eat one bite of pineapple or coconut,...that leaves more for me!!LOL
