Anyone Have Foodservice Supply Background?

Hi:

I'm wondering if anyone here has current background in foodservice sanitation supplies, specifically foodservice dishwasher detergents?

I have a question about hard (as in hardhardHARD) water limescale and streaking, and what might prevent it. I'm hoping someone has current experience, because dishwasher detergents of all types are changing these days.

Anyone?
