Bluetooth and cellphone compatibility

I don't know much about Bluetooth, the only bluetooth device I have is a Uniden cordless phone which I have connected with my phone (Samsung Galaxy S3). Both are about the same age and work fine together. (I can make and receive calls from the cordless phone, over either the land line or my cell phone).

But I was wondering about older cars that have Bluetooth. For example will a 2005-07 Chrysler or Dodge with the older UConnect work with my Galaxy S3 or a new phone? Or is Bluetooth all the same?
 
If the car has Bluetooth then it should be able to connect to your phone,,should being the word.

There are all sort of little Bluetooth adapters out there and fairly cheap. For $12 I got a tiny little Bluetooth receiver, charges on a USB port, it has a standard mini RCA jack, plugged that into my older Bose radio aux in port and now I can play the music on my puter or from the partners IPhone over the Bose for better sound.
