Tuna, egg or chicken salad in celery ribs is good, too, and makes for an attractive presentation when they are arranged to radiate out from the center of a platter with orange curls or sticks, radish roses, pickles, parsley, etc.
Yesterday I had my first two onion and tomato sandwiches on marble rye bread. Oh so delicious and I used a Roma tomato so very little drippage.
