Chicken Casserole...

I decided to make this for dinner tonight, It came from another great Cooking Show Lady, Nancy Welch, who was on TV for many years on WSPA Spartanburg S.C.

1 stick margarine
1 pkg Pepperidge Farm Herb Seasoned Stuffing Mix.." Can Use the Corn Bread Stuffing if desired"
1 can cream of mushroom soup
1 can cream of chicken soup
2 cups chicken broth
4 large chicken breasts or 1 whole chicken, boiled and deboned, cut into small pieces.
In long baking dish..: I use 8x12 Le Cruset.,melt margarine, sprinkle half of stuffing mix over it, mix 1 cup broth and can of cream of mushroom soup together, spread this over first mixture, then evenly spread chicken over this,mix other cup broth with cream of chicken soup, pour over then add rest of stuffing on top, bake 350 for 45 minutes..This is not at all dry like some chicken casseroles can be..Nancy Welch was another program NEVER missed by my Grandmother and Aunts.

I had forgotten about this casserole.  Have everything on hand at home and will make it for dinner tonight too.  Was sitting here at work thinkg of what to fix for dinner.  I get off at 4:00 and wife at 5:00 so have plenty of time.  I think even have some cranberry sauce to have with it.
