It is that time of year.  We do lots even though I can only taste it as I am diabetic.

 

We make more and more of our cand in the microwave.

 

Here is one and have more at home that I can post later.

 

Microwave Butter Toffer (Like a Heath Bar)

1 cup sugar

1/2 cup (one stick) butter

1/4 cup water

1 Tsp Vanilla

1/2 cup of semi-sweet chocolate chips

1/2 cup chopped nuts (I like pecans or walnuts) or can leave out

 

Combine the sugar, butter and water in a deep 2 quart bowl or batter bowl (glass or MW proof)  MW on high to 5 minutes uncovered and stir.  MW another 4 minutes uncovered and test for hard crack stage either with a candy thermoter or using cold water and if not MW another minute or and check again.  Pour into a buttered 9x13 in pan and then sprinkle the chips over the hot toffee let melt then spread over the surface and sprinkle witht he nuts if using.

 

Let cool  and break into pieces.

In a glass bowl, combine peanuts, sugar, corn syrup, and salt. Cook in microwave for 6 to 7 minutes on High (700 W); mixture should be bubbly and peanuts browned. Stir in butter and vanilla; cook 2 to 3 minutes longer. </span>

Coconut Brittle

I have made the same basic "brittle" using unsweetened coconut. If you like the taste of toasted coconut and the sweetness and texture of brittle it is delicious!

I used wide flaked coconut.
