I left work early this afternoon as I wasn't feeling well. I was craving freshly-made flour tortillas, but didn't feel like leaving the house to pick up dinner. I had the ingredients, so I made some flour tortillas and served them with Taco meat, refried beans, cheese and homemade Pico de Gallo.

The tortillas turned out beautifully, and were much easier to make than I remember! Here's the recipe (I must admit, I don't measure the ingredients, so these are approximations):

2 cups of all-purpose flour
1/2 tsp baking powder
1 tsp salt
1/4 cup shortening or lard
Very Warm Water.

Mix the dry ingredients together. Mix in the shortening or lard with your fingertips until the mixture resembles small crumbs. Slowly mix in the warm water until the mixture comes together. Turn out onto a floured surface and knead until the mixture is smooth. Cover and rest for 15 minutes.

Divide dough or "masa" into 10 - 12 balls. Roll out each ball with a rolling pin until thin and round. Cook on a preheated iron skillet on medium-low heat, flipping every 20 seconds until cooked evenly on both sides. Enjoy while hot and fresh!

This just how a former coworker showed me how to make tortillas many years ago, except Frank said to use self rising flour. They are so good when they are fresh and homemade. I haven't made them for a long time, your post makes me want to make some, and since I don't have self rising flour you have given me the correct amount of baking powder to use, thanks!
 
Fresh tortillas----delicious! Tried to make corn tortillas a few times but the repeatedly disastrous results discouraged me from giving it another go. Didn't occur to me to try making flour tortillas. Thanks for the recipe.
