Both of my about 20 years old Miele washer and my "vintage" Bosch dishwasher still allow me to make major changes once the cycle has been started.
The dishwasher at least accepts changes for the next program step so I can make my own cycle like having the wash part of one cycle paired with the rinse and dry part of another.
The old Miele gives me even more control, not to the point of a mechanical timer but I can still repeat or omit any major part of the cycle and as a control freak I appreciate the flexibility.
For example any of the new washers still have cycles like "rinse only" or "spin only" but there`s no way having a particular one like the rinse of a perm press cycle or the spin profile of a wool cycle unless you start a full cycle all over again.
I find this very annoying and it keeps me from updating my appliances.
 
 

1. Load the laundry, shaking out each piece to avoid balling up.

 

2. Empty excess water from the detergent dispenser and pour in the Tandil from ALDI.  Add bleach if appropriate.

 

3. Dial up the cycle, add any options and ask Siri to set a timer equaling the initial time remaining estimate.  Hit the Start/Pause button.

 

4. Check from time to time to see if an extra rinse or two might be needed.  Adjust the iPhone timer if necessary.

 

Not so much a control freak as time-remaining obsessed.
 
I know of 3 major modern machines that had similar flexibility.

Panasonic allowed you to run any part of any cycle with any option independently on their washers.
For example, I would often run the Cottons Eco final spin as a spun only instead of the normal one. It was slightly shorter, doing fewer pulses, but staying at max speed for longer.

Many modern ELux machines in certain feature ranges have a button to select rinse only or spin only - which then gives you the cycle specific rinses and spin.

And, of course, my VZug works pretty similar to the Mieles like the Novotronics. Just set any cycle and option combo, and then skip to either rinses, final rinse or final spin.

I know that BSH DWs used to allow to switch the cycle completely for the first few minutes, and then only gor the following steps.

Modern HomeConnect capable machines allow you to select SpeedPerfect at any point in the cycle through the app - even during drying.
You can "silence" the machine for up to 30min (basically pausing it on a timer).

One reason hang onto my Miele W1030 and shall deeply mourn day it's no more is total control over cycles via those three dials.

Timer, temperature and cycle selection being independent of each other offers one a world of choices. This as opposed to either of one's AEG washers.
 
Set & Forget

My dishwasher is flexible enough for my requirements, allowing me to add extra heat, drying or a rinse. I can go from a wash and two rinses to two washes and four rinses - flexible enough for me.

The washer is in a storage room just outside of my apartment. While it is just one step away from my entrance door, I'm not going back and forth to check on it or to adjust the cycle. I could sit around in my apartment in total silence to catch the washer draining and change the cycle but... nah.

Truthfully, when I see those W1 Miele washers with their 23 cycles and 13 options, I do wonder who realistically uses all of that.
 
Alexander, I agree with you there. In our W1, we use cottons, delicates, shirts and power wash. All of the other cycles don’t get touched. Options wise, it’s Short, water Plus and steam.

The Fisher Paykel toploaders also let you skip steps of the cycle, to let you skip through till the end.
 
My LG WM4200 allows the following. Power up, turn cycle knob to a specific cycle, then select rinse & spin option, and the rinse & spin settings is reflectie of the particular fabroc cycle.
