OK as I was saying; This is a thread about what everyone here made for Easter Dinner.  I know we have quite a few accomplished cooks/chefs here so this should be fun.

 

My wife does not like ham so I went the Thanksgiving in April route. My Dad also came and picked up a to go order for him and MonHere is the meal:

 

Pic 1 Turkey roast. ( this is a foodservice cut made from Breast/Thigh meat) Rubbed with pepper, granulated garlic and sage and roasted with butter and Swanson's bone broth underneath to help develop the fond and make a base for gravy

 

Pic 2 Sausage and wild rice stuffing and candied sweet potatoes.

 

Pic 3 Mashed potatoes and gravy.

 

Pic 4 The Sunflower Queen's(Katie's) dinner.  She gave it a (Num Num) The highest rating she will give any meal I make. The rolls are King's Hawaiian. 

 

How I don't know but I knocked this one out from scratch in a 6 hour cook a thon.  The dishwasher is on load 4 and I feel like I have been on Chopped.  HAPPY EASTER

Again, looks delicious!

I posted my description of ours above in shelter at home cooking. We ate with our kids and grand kids via facetime, as son in law is paranoid still about the virous.
We've been social distancing since we last saw them in person March 14th.
We knew it was coming. You tend to be more aware of things when one of you works in the medical field. Common smese also told me that it was out of China before they even kniew it.
As of this morning, China is seeing some increases in cases. Wuhan has been opened back up for a couple days already.
One of our own says the metrics for opening up the USA again is all stored in his head. LMFAO! Just like he/they knew about this in January, and should have been telling us to social distance then, or at the very least when our first few cases appeared, but it was one, two, or three, and they were "quarantined", so in a short time, it would be none, or contained.
 
<span style="font-size: 14pt; color: #008000;">The hospital switched me over from all liquids (yick) to solid food. I had real sliced turkey with mashed potatoes and gravy, steamed carrots and chocolate pudding and ice cream for desert. It was actually very good. If I were at home I'd probably have opened a can of soup.</span>
 
That looked like a classic Minnesota comfort food meal! I envy your access to foodservice products--a lot of them are really good and inexpensive per serving. Katie is lucky to have an experienced cook in the house! It's undoubtedly a cake-walk to cook for two compared to your day job, LOL.

We managed to have a snowstorm down here in the southwestern corner of the state. I estimated 6" of snow, but official measurements came in at 8". Another Easter snowstorm for the books.
 
<span style="font-size: 14pt; color: #008000;">Thanks to all the well-wishers. I am back home after being "institutionalized" for a whole week. Not to get to gory, I had a laparoscopic ileostomy as opposed to a colonoscopy. The ileostomy is temporary where the other is not. I will return to the hospital after I heal up at which time the surgeon will put things back the way they were. My poor confused colon.</span>

Yeah Frig,  It really is a good comfort food meal.  One of the best in my book. I made it because it is Katie's favorite save for stuffing.  It worked out well that our crazy MN weather would make it the perfect meal for the day.  It was fun just rocking out in the kitchen, Think: Boston, Pink Floyd, Eagles, Byrds, Zeppelin and the list goes on and cooking for a whole afternoon while the dishwasher hummed.  A perfect Twin Cities snowstorm/Quarantine Easter. 

 

Mattl:  Sorry, my cooking pics do have that effect. LOL! Hope you had an awesome Easter meal. 

 

Twintubdexter:  Very glad you are home from the Hospital.  Also glad you were able to come off of your Full Liquid Diet in time for a good Easter meal.  Hospital food has gotten much better thanks in large part to Sodexo. 

 

Dadoes:  Mac and Cheese with sausage sound quite good to me.

 

joeekaitis: Nothing wrong with Popeye's.  I like their chicken.

Good news Joe!

My brother in law and father in law both wear an ostomy bag. Ulcerative colitis. Father since age 45, son since age 14. Hereditary, and both are type A personalities. My Joe has none, thankfully.
