Here is the version delivered to me by my brand of the voo-doo (religion).
The egg is symoblic of the new life waiting to emerge. In nature, eggs are sometimes blood stained as the animal has a hard time passing them. This is symbolic of the difficulty necessary to create a new life (i.e. revamp your own).
Second part of story. (this is part of the unwritten tradition). Mary Magdaline had been infformed of the empty tomb. She is reported to have said: I don't beleive it; only if the eggs in this basket turn red will I believe it. They did.
I'm not sure but my understanding is that eggs were not eaten for a period of time in that the people were fasting (Related to Passover?) A number of people, then, had a collecion of eggs which were given as gifts (to those who could/would eat them. [And as we all know, based on the economic principles of supply and demand, lots of supply and low demand means prices fall, so why bother selling? LOL].
My ethnic group plays a little game at the dinner table, smashing the eggs "nose to nose" or "rear to rear". The person who has the hardest one (doesn't break, or breaks last) is said to be lucky all year.
Of course my other sub-culture has been known to play similar games...... but not with eggs and not at the dinner table.
