Ralph is a big spinach fan, and he's always finding ways to use it in recipes. Here's a simple spinach pie - no phyllo dough - but it really was delicious. A filling and great tasting version on the traditional Greek recipe.

 
A great video with wonderful results. How comforting to know Ralph will be able to take over when, in a few short years, Kevin is in the Woodward Avenue Old Folk's Home with nothing to cook on but an illegal hotplate.

LOVED spinach....and tried her best to make me eat it....im going to be 50 in September and I haven't eaten it yet!!LOL...I do love it raw on a salad, but Ralph..I wont fight you for one leaf if its cooked!!!!Im stange I guess, I LOVE tomatoes ...as long as they are cooked, but I wont touch a raw one!!!.....Can't wait to see you guys, Ive still not got my menu together, but since its so miserably hot, I promise to have some cold dishes, it was 97 this evening at 7 pm uptown on the sign at the bank!!!!Ive got the central AC going AND a 6000 btu window unit un the kitchen !

and the Spinach Pie looks delicious! You did an excellent job with your demonstration. I really enjoy your Cavalcade of Food demos and recipes. I do have a hint for you though. Many years ago I saw a cooking show quite by chance titled, "Cooking Plain and Fancy". It was done by a housewife kind of lady, can't recall her name. Anyway, she was making meatballs, and she used a 2 tined large cooking fork (like the ones that came with Cutco knife sets) to mix the meatball mixture. She said that by using the large fork the mixture would stay light and the meatballs would not get tough. Every since I've been using a 2 tined fork to mix things like the Spinach Pie mixture. It really helps incorporate the ingredients without breaking things down, or compacting the mixture. I use this method for meatloaf, meatballs, stuffing, ect. I've also found that using the large fork to cut flour and shortning together for pie crust is easier that a pastry blender, and easier to clean!
