and the Spinach Pie looks delicious! You did an excellent job with your demonstration. I really enjoy your Cavalcade of Food demos and recipes. I do have a hint for you though. Many years ago I saw a cooking show quite by chance titled, "Cooking Plain and Fancy". It was done by a housewife kind of lady, can't recall her name. Anyway, she was making meatballs, and she used a 2 tined large cooking fork (like the ones that came with Cutco knife sets) to mix the meatball mixture. She said that by using the large fork the mixture would stay light and the meatballs would not get tough. Every since I've been using a 2 tined fork to mix things like the Spinach Pie mixture. It really helps incorporate the ingredients without breaking things down, or compacting the mixture. I use this method for meatloaf, meatballs, stuffing, ect. I've also found that using the large fork to cut flour and shortning together for pie crust is easier that a pastry blender, and easier to clean!
