Obsessively bought a lot of lunch meat and cheese while having lettuce and tomato handy, so with rising food prices, and me dieting as in accordingly not having the appetite I’d used to during more joyful and what’s to me less stressful times, I at least get and enjoy the four basic food groups:

Dave,

I don’t know that sandwiches are necessarily economical, but they can be. That being said sandwiches are just about my favorite food of all. If I had to choose to only be able to eat one thing for the rest of my life it would be sandwiches, provided I could have a variety of them.

Every Friday is sandwich night for dinner in our home. Either Grilled Ham and Cheese, Tuna Melts, BLT’s, BLAT’s, Egg Salad, Tuna Salad, Turkey, Ham and Cheese, Club Sandwiches, Salami, you name it I make it. Every day for lunch I make one sandwich that we both split, since at our age we don’t need a big lunch. I bake all the bread in our home mainly because homemade bread is just better for sandwiches.

Looks like you like a variety of sandwiches too. Enjoy!

Butter

A hint for making sandwiches with mayonnaise based salad fillings. Always coat the bottom slice of the bread with a very thin film of soft butter, this keeps the bread from getting soggy by sealing the bread. I learned this from both my Mom and from cooks in restaurants that I worked in when in when I was a teen.

And this is also a must for making Peanut Butter and Jam sandwiches. Mom always said that butter on the bottom slice of bread before spreading it with the peanut butter kept them from “sticking in your craw”. Try it, it really makes swallowing a mouthful of a PB&J much easier and it’s tasty too.

Just remember, the butter must be SOFT so it spreads easily and completely and doesn’t tear the bread.

I bought a 2.5 lb.chicken yesterday for only $3, stuffed and roasted it. So far got 2 meals, picked the chicken carcass and have enough to put in the food processor with celery, onions and pickles with lots of spices to make my favorite chicken salad. I'll get at least 2 more meals for only $3 total.
 
Buttering the bread:

The extra step has been worth it as the sandwich does stay together a bit better, and this method for doing it by putting a couple pats of it in the pan lets me put my bread with the meat and cheese in there so the cheese will melt…

I can also flip it over so the other side with my dressing, lettuce and tomato gets done and additional cheese melting comes with it, though sometimes with needing another pat of butter added…
